The Summer Salad

Let me introduce you to the BEST summer salad. If summer had a “taste”, it would have to be this combo of in season tomatoes, peaches and basil. When I first heard about combining tomatoes and peaches in a salad, I was skeptical to say the least… it just didn’t sound like they would go together. I was most definitely mistaken – it may be my favourite combo of all time.

I make this salad all summer long while peaches and tomatoes are in season. I make it as a side for dinner when we have people over, and even to bring to work for lunch. It is so easy and fast to prepare since it really only has 5 ingredients (without counting the dressing). To make it a complete meal just add some grilled chicken or skirt steak. Here is how it’s done!


  • Tomatoes – cherry tomatoes halved or heirloom tomatoes cut into bite sized pieces.
  • Peaches – the trick to cutting up peaches for this salad is make slice cuts all the way around the peach from top to bottom, then make one cut along the equator. Twist the top and bottom to release perfect bite size pieces.
  • Fresh Basil – big leaves torn into pieces, smaller leaves can stay whole
  • Feta – crumbled
  • Arugula or lettuce
  • Dressing: mix together balsamic reduction, a splash of balsamic vinegar and olive oil with salt and pepper.
